Giorgio
Piero Selvaggio a true pioneer of fine Italian dining
has brought his 25 years of experience at Valentino
in Santa Monica to the Las Vegas Strip at Caffe
Giorgio in Mandalay Place. His partner Lucciano
Pellegrini from Bergamo in northern Italy grew up
eating food unrelated to the red sauce, garlic and
pepper-laden fare that is most thought of when eating
Italian. The menu designed by Selvaggio and Pellegrini
is a bounty of northern Italian favorites like lasagna
ala Bolognese, layered with veal ragu and a rich
béchamel sauce; and pappa al pomodoro, a
comforting thick Tuscan tomato soup made with day-old
bread. Also featured are pizzas, gelati, desserts,
assorted appetizers and antipasti from a unique
antipasto bar.
